Step 1 instruction thumbnail 1

Rinse the turkey or chicken pieces thoroughly and place in a pot with half the diced onion, Scotch bonnet, ginger, garlic, thyme, curry powder, bouillon powder, salt, bay leaf, and water.

Step 2 instruction thumbnail 2

Cover and cook over medium heat until the meat is tender, approximately 15 minutes. Remove the meat and reserve the stock.

Step 3 instruction thumbnail 3

Transfer the cooked meat to an air fryer or pan-fry in shallow oil until golden. Set aside.

Step 4 instruction thumbnail 4

In a clean pot, heat the coconut oil over medium heat. Add the remaining onion and fry until translucent.

Step 5 instruction thumbnail 5

Stir in the crayfish, blended tatashe, and habanero. Cook for 2 minutes.

Step 6 instruction thumbnail 6

Pour in the coconut milk and reserved chicken stock. Bring to a boil.

Step 7 instruction thumbnail 7

Add the washed rice, reduce heat to low, cover, and simmer until cooked through, about 20 minutes.

Step 8 instruction thumbnail 8

Meanwhile, season the shrimp with paprika, garlic powder, onion powder, and salt. Pan-fry in coconut oil for 2-3 minutes until pink. Remove and set aside.

Step 9 instruction thumbnail 9

In the same pan, stir-fry the diced bell peppers until tender-crisp. Add the fried meat and toss to combine.

Step 10 instruction thumbnail 10

Gently fold the bell pepper, meat mixture, and shrimp into the cooked rice. Serve hot.

Creamy Coconut Comfort from Lagos

Nigerian Coconut Rice
Yum User
Yum User

Simmering rice in coconut milk rather than plain water transforms the grains into something altogether more luxurious, a technique that Nigerian cooks have perfected for generations. The addition of ground crayfish might raise eyebrows if you have not encountered West African cooking before, yet it provides an unmistakable depth that anchors the sweetness of the coconut.

This is party food in the truest sense - not the quick midweek supper I usually manage, but a dish that demands you gather people around the table. The Scotch bonnet contributes fragrance rather than overwhelming heat, while the bell peppers add colour that brightens any spread.

What I love most is how the turkey or chicken gets a second life, first boiled for stock then fried until golden. It is a thrifty, respectful approach to ingredients that feels particularly relevant when you are cooking for a crowd. Serve it straight from the pot and let everyone help themselves.
