900 ml / 30 fl oz
30 g / 2 tbsp
5 g / 1 tsp
2 g / 1/2 tsp
45 ml / 3 tbsp vinegar
75 ml / 5 tbsp
700 g / 1 lb 9 oz small , peeled and left whole
150 ml / 5 fl oz
5 cm / 2 inch

Preheat the oven to 160C.

Heat the olive oil in a large saucepan and brown the beef cubes, persevering until the moisture evaporates and the meat turns golden.

Slowly pour the vinegar over the meat, and when the steam subsides, add the wine.

Add the water, tomato puree, salt, pepper, rosemary, cinnamon stick, and allspice. Cover and cook slowly for 1 hour or until the meat is almost tender.

Heat the vegetable oil in a frying pan and sauté the peeled onions in a single layer for about 15 minutes, shaking and turning until lightly browned.

Lift the onions out with a slotted spoon and spread them evenly over the meat.

Sprinkle the sugar over the onions, cover, and cook very gently for 30 minutes until the onions are soft but not disintegrating. Do not stir once added, but rotate the saucepan occasionally to coat them in the sauce.
