50 g / 1.75 oz whole (skins on)
90 g / 3.2 oz (approximately 3 large)
175 g / 6 oz
To Serve
125 g / 4.4 oz fresh
300 g / 10.5 oz (sliced into thin wedges)
90 g / 3.2 oz
2 g / 0.07 oz (approximately ½ lime)
7 g / 0.25 oz roughly chopped (optional)

Instructions

For the Meringue

Line 2 baking sheets with baking paper and draw a 20 cm circle on each

Preheat the oven to 120°C fan/275°F

Tip the almonds onto a small baking tray and toast in the oven for 5-10 minutes until lightly toasted, then remove and allow to cool

Pulse the cooled almonds in a blender 5 times to achieve a coarse grind

Whisk the egg whites in a bowl until stiff peaks form

Gradually whisk in the sugar a little at a time, whisking in between each addition, until the meringue is stiff and shiny

Carefully fold in the chopped almonds

Divide the meringue equally between the two baking sheets, spreading each out until it reaches the sides of the circle

Place in the oven and bake for 1 hour and 20 minutes until dry, switching the baking sheets round after 40 minutes

Turn the oven off and allow the meringues to cool in the oven

When ready to assemble

Place one meringue on a serving dish

Spoon over half the Greek yoghurt and smooth with the back of a spoon

Scatter half the peach slices and raspberries over the yoghurt in an even layer, then carefully place the other meringue on top

Lightly press the meringue and then spoon over the rest of the yoghurt and arrange the remaining fruit on top

Make ahead
The meringue discs can be baked and stored in an airtight container for up to 2 days before assembling. Only add the yoghurt and fruit just before serving to prevent the meringue from becoming soggy.

If peaches are unavailable, nectarines or apricots work well. For a dairy-free version, use coconut yoghurt instead of Greek yoghurt.
